Oven Temperature Conversion Guide
Different countries and different recipe traditions use different temperature scales for ovens. American recipes typically list temperatures in degrees Fahrenheit (°F), European recipes in Celsius (°C), and older British and Commonwealth recipes often reference Gas Marks. This oven temperature converter handles all four formats including Fan (fan-forced/convection) temperatures.
Fan Oven vs Conventional Oven
A fan oven (also called a convection oven or fan-assisted oven) circulates hot air with a fan, cooking food more evenly and efficiently than a conventional static oven. Because of this increased efficiency, fan ovens cook at approximately 20°C (or 25–50°F) lower than the equivalent conventional temperature. Most recipes that specify a conventional temperature can be cooked in a fan oven by reducing the temperature by 20°C and potentially shortening the cooking time by 10%.
Gas Mark Reference Guide
Gas Marks are used on gas ovens and range from ¼ (very cool, ~110°C) through to 10 (extremely hot, ~260°C). Gas Mark 4 (180°C / 350°F) is "moderate" and is the most common baking temperature for cakes, cookies, and bread. Gas Mark 6 (200°C / 400°F) is used for roasting vegetables and meats.
